Zucchini Bread

Ingredients

  • 1/2 cup coconut flour
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 tsp baking soda
  • 1/2 tsp pink salt
  • 4 eggs
  • 24-36 drops SweetLeaf Stevia
  • 1 cup zucchini shredded finely
  • 1 ripe banana mashed
  • 1 tbsp coconut oil

Instructions

  • Preheat oven to 350 degrees
  • Grease a bread loaf pan or line with parchment paper
  • Shred zucchini finely
  • Place shredded zucchini in kitchen towel and squeeze all the moisture out of it
  • Process eggs, Stevia, coconut flour, oil, and banana together in food processor
  • Stir cinnamon, nutmeg, salt, baking soda, and zucchini into mixture until the batter is smooth
  • Pour batter into loaf pan
  • Bake for 45-50 minutes (or until a toothpick inserted into the center comes out clean)
  • Allow to cool
  • Remove from loaf pan and slice into 8 slices
