  • 8 oz zucchini
  • 7.5 oz grape tomatoes
  • 2 tbsp tomato paste
  • 1/2 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • pink salt, to taste
  • 1/8-1/4 cup water plus water for boiling zoodles


  • Bring water to boil in medium saucepan
  • Spiralize zucchini and place in boiling water
  • After zucchini noodles are cooked to desired consistency, remove from heat and strain
  • In second saucepan, combine 1/8 c water, garlic, grape tomatoes, and spices and bring to a boil then cover and reduce heat
  • Cook sauce ingredients until tomatoes start to pop open, stirring occasionally
  • Stir in tomato paste and extra water, if needed
  • Pour sauce over zoodles and serve
