  • 1 can albacore tuna
  • 8 oz zucchini
  • 1 tbsp minced garlic
  • 1 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1/2 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp thyme
  • pink salt and pepper, to taste


  • Heat vinegar in skillet over medium heat and add undrained tuna and garlic
  • Use a potato peeler to cut zucchini into strips then cut into thirds
  • Stir zucchini into skillet and place lid on top for 3-5 minutes
  • Remove lid and stir in mustard, onion powder, Italian seasoning, and thyme
  • Place lid on top again and cook until zucchini is tender
  • Drain liquid then season with pink salt and pepper
