  • 1 eggplant sliced thin
  • Coconut oil spray or avocado oil spray
  • 3/4 tsp smoked paprika
  • 3/4 tsp garlic powder
  • 1/2 tsp dried oregano leaves
  • 1/4 tsp thyme leaves
  • 1/4 tsp ground turmeric
  • 1/4 tsp fresh ground pepper
  • 1/4 tsp onion powder
  • 1/8 tsp dried ground sage
  • 1/8 tsp sea salt
  • pinch cayenne pepper


  • Preheat oven to 250 degrees and set aside 2 large cookie sheets
  • Mix all spiced together in small bowl
  • Slice the eggplant as thin as a potato chip using a mandolin slicer or a sharp knife
  • Place completed slices on cookie sheets
  • Spray with coconut oil or avocado oil spray on one side
  • Sprinkle all slices with spice mix
  • Once complete, flip over each eggplant slice and repeat with a spray and seasoning
  • Place in the oven to bake for 50-60 minutes (If you make them too thick, they can take upwards of 2 hours to complete.)
