- 1 cup full-fat coconut milk
- 1 cup fresh cilantro packed cup
- 1 tbs lime juice
- 1/2 tsp pink salt more to taste
Combine all ingredients in blender and blend for 30 seconds., until smooth. Taste and adjust the salt and lime to your liking.
Transfer the dressing into an airtight container and refrigerate until needed. Remove from refrigerator 20 minutes before serving for creamier consistency.
