  • 4 tbsp egg whites
  • 1 egg
  • 1/4 cup unsweetened almond milk
  • 1/8 tsp baking soda + 1/2 tsp vinegar or 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla if desired
  • 2 tbsp flax meal
  • 2 tbsp coconut flour


  • Heat skillet to medium-high
  • Whisk eggs and almond milk in liquid measuring cup with pour spout until well
  • Stir in baking soda/vinegar (or baking powder), cinnamon, and vanilla, if desired
  • Stir in coconut flour and flax meal
  • Lightly grease skillet
  • Pour pancake sized amount of batter into skillet
  • Allow to cook on one side until fluffy and bubbly in center
  • Flip and cook on other side

These are AWESOME served with Coconut Butter spread on top and Mock Pancake Group
