  • 1 cup egg whites
  • 1/2 tsp cinnamon
  • 6 packets Stevia
  • 1/8 tsp xanthan gum optional


  • Preheat oven to 350 degrees and line baking sheet with parchment paper
  • Pour egg whites into bowl and mix with hand mixer until eggs for stiff peaks (Be patient with this b/c it's the most important step!)
  • Gently stir in cinnamon, stevia, and xanthan gum (if desired, to help puffs keep their shape when baking)
  • Spoon by the tablespoon onto baking sheet
  • Bake for 12 minutes, or until golden on top
  • Sprinkle with additional cinnamon, if desired
