- 4 oz onion finely chopped
- 1 clove garlic minced
- 8 oz tomatoes chopped
- 3 oz chicken breast cooked and cubed
- 1/4 c fresh basil chopped, or 1-2 tbsp dried basil
- pink salt to taste
- pepper to taste
- 1/8 tsp hot pepper sauce
Warm large skillet to medium-high heat.
Sauté the onions and garlic in a little water.
Stir in the tomatoes, chicken, basil, salt and hot pepper sauce.
Reduce heat to medium, and cover skillet.
Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
