Ingredients
- 1 can full fat coconut milk
- 1/2 cup cauliflower "rice" chopped fine in food processor
- 1/2 cup shredded, unsweetened coconut
- 2 cups grated apple
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Stevia, to taste
Instructions
- Mix coconut milk, cauliflower, apple, vanilla, and cinnamon in a pot over med-high heat
- Reduce heat, cover, and simmer for 15-20 minutes
- Serve warm or cold (like rice pudding)
- Top with raisins, nuts, etc. if desired
